Ingredients :

  • 2 1/2 cup(s) of milk
  • 1 cup(s) of coconut milk
  • 2 1/2 cup(s) of sugar
  • 1/2 kilo(s) of tapioca flour
  • 250 grams of fresh coconut
  • 1 teaspoon(s) of salt
  • condensed milk to taste, to serve (optional)
  • fresh grated coconut to taste, to decorate

Method of preparation :

Heat the milk and coconut milk in a pan, without letting it boil. In a bowl, mix the sugar, tapioca flour, coconut and salt. Pour the hot milk into the bowl, mix and transfer to a rectangular shape. Let it rest until the tapioca is soft (about 1h30).

If you prefer to make individual portions, form the tapioca without pressing too much, into small pudding molds. Or leave it in a rectangular shape to cut and serve in squares or rectangles. Before serving, finish with fresh grated coconut and condensed milk on top.
